Pinto Beans and Sausage

*Hearty Pinto Beans & Sausage: One-Pot Slow Cooker Comfort Food* *Servings:* 6-8 people *Ingredients:*

  • 1 (16 oz) can pinto beans, drained and rinsed
  • 1 lb smoked or Andouille sausage, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 cup chunky spicy salsa
  • Salt and pepper, to taste
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil (optional, but used in your video)

*Instructions:*

  1. Heat olive oil in slow cooker insert or large skillet over medium heat. Add sausage and cook until browned, about 5 minutes.
  2. Add diced onion to skillet and cook until translucent, about 3-4 minutes. Add garlic and cook 1 minute.
  3. Transfer sausage and onion mixture to slow cooker.
  4. Add pinto beans, oregano, cumin, paprika, salt, pepper, and chicken broth and salsa to slow cooker.
  5. Stir to combine, then cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Serve hot, garnished with chopped fresh cilantro or scallions (optional).
