
*Hearty Pinto Beans & Sausage: One-Pot Slow Cooker Comfort Food* *Servings:* 6-8 people *Ingredients:*
- 1 (16 oz) can pinto beans, drained and rinsed
- 1 lb smoked or Andouille sausage, sliced
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 cup chunky spicy salsa
- Salt and pepper, to taste
- 1/4 cup chicken broth
- 2 tablespoons olive oil (optional, but used in your video)
*Instructions:*
- Heat olive oil in slow cooker insert or large skillet over medium heat. Add sausage and cook until browned, about 5 minutes.
- Add diced onion to skillet and cook until translucent, about 3-4 minutes. Add garlic and cook 1 minute.
- Transfer sausage and onion mixture to slow cooker.
- Add pinto beans, oregano, cumin, paprika, salt, pepper, and chicken broth and salsa to slow cooker.
- Stir to combine, then cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- Serve hot, garnished with chopped fresh cilantro or scallions (optional).
